For this class we have selected a range of classic salads that will grace any picnic or summer buffet table along with one or two main dishes.  You will make a verdant fresh pulse salad chock a bock full with new season broad beans, green beans, borlotti beans and peas.  It is understandable why at this time of the year a classic Jersey Royal potato salad with homemade chives, capers and gherkins remains a firm favourite as it remains a perfectly balanced dish.  More unusual is the combination of sun ripened tomatoes with sweet oranges and olives and the sweet and sour sautéed courgette and mint salad with both of these being guaranteed to please too.  The selection of colours and flavours will be wonderful and we are sure that you will want to add each of these dishes to your summer salad repertoire.
