Knife skills for life

We are really excited to officially announce our partnership with German knife makers WÜSTHOF.

We have actually been working with WÜSTHOF knives for many years and all Cookery School students, from our beginner home cooks to our professional cooks in training, use WÜSTHOF knives to learn skills and put their learning into practice, as do our corporate clients. A family-owned business, WÜSTHOF have spent over 200 years perfecting a knife! We completely agree that the knife is, after all, the workhorse of the kitchen and a tool that, with careful care,  should last a lifetime.

We love the WÜSTHOF  values and approach to design with longevity and quality at the forefront. So many of our students from beginners to competent cooks comment on the quality and sharpness and ease of use when slicing and dicing with us. We always tell people that working with blunt and inefficient knives makes for a lot more work.

When WÜSTHOF visited us recently, we were able to learn about the design process – a 54-step process is employed to make the knives, with each knife meticulously forged and crafted from 100% German steel in Germany.

Our Knife Skills classes

We are now delivering our Knife Skills classes in partnership with WÜSTHOF.

When you book a place on either of our Knife Skills’ classes you will receive a WÜSTHOF Classic Asian Utility Knife, on the day of the class. This 12cm knife can be used as a small chef’s knife and as a paring knife which is incredibly useful. What’s more, it really is fantastic value and usually retails at £49.00.

Depending on your skill level, both of our Knife Skills classes teach you invaluable skills in terms of choosing the right knife for the job, using your knives correctly and looking after them to ensure that they last a lifetime. The dishes that make up the menus for each class thoroughly teach and reinforce the knife skills that you need to feel confident at home in the kitchen. Plus, they make a fantastic meal for you to sit down and eat sat the end of the class!

Introductory Knife Skills with WÜSTHOF

In our Introductory Knife Skills class, master basic knife skills and learn to make:

  • -Minestrone with pesto (loads of chopping of all sorts)
  • -Caramelised onion focaccia (slicing onions easily)
  • -Grilled catch of the day with a herbed topping (filleting and fine chopping)
  • -Fresh oranges with Grand Marnier (segmenting citrus fruits)
  • -Wonderful apple cake (cutting up apples)

-Demonstration:  how to carve a whole roast chicken.

The Ultimate Knife Skills with WÜSTHOF

In our Ultimate Knife Skills class, build on your existing knife skills and learn to make:

  • -Bone a chicken and make an organic ground chicken and herb filling (you will chop all of the ingredients for the herb filling)
  • -Fillet a flat fish to be baked with finely chopped mixed herbs, lemon juice  and olive oil
  • -Fillet a round fish to be served with a vegetable pickle
  • -Julienne vegetables that will be used to make a quick pickle
  • -Baton vegetables to make a wonderful borscht
  • -Slice and dice seasonal vegetables to accompany the roast stuffed chicken
  • -Prepare potatoes for hasselback potatoes
  • -Prepare apples for a Tarte Tatin for dessert

-Demonstration: how to butterfly a leg of lamb, break down a raw chicken into component parts and how to carve a freshly roasted chicken.
