Recipes for National Cooking Programme – Week Sixteen

We’re very excited to launch our National Cooking Programme an ‘oven-ready’ programme of x20 FREE online interactive classes for teenagers wanting to learn to cook. Here is what we’ll be cooking on Wednesday 29 September 2021 at 5.30pm which will be livestreamed on Instagram and YouTube.  Please get prepared with the ingredients and familiarise yourself with the recipe so you can cook along with us.

Shopping list

Firstly, here is a handy shopping list for all of the ingredients required:

500g granary or malthouse flour
Instant dried yeast
Olive oil
2 eggs
Mayonnaise
Few chives or spring onions
Small handful of parsley
Salt and pepper
Small tin or tuna
2 large tomatoes
Few slices of favourite cheese
Humus
Few pieces of lettuce
½ cucumber

 

Granary Bread Rolls

Ingredients

1lb/450g granary or malthouse flour – about 4 cups
1 teaspoon salt
2.5ozs60ml/olive oil
1 cup warm water
handful of mixed seeds eg pumpkin, sunflower, poppy, sesame if desired

Method

1. Place the flour, dried yeast and salt in a large mixing bowl.
2. Add the oil and warm water.
3. Mix all together until a dough is formed. The texture of the dough should be like a soft
‘play dough’.
If using a food processor, blend together for 30 seconds with metal blade.
4. Using a floured surface, knead the dough until it becomes smooth and pliable. If it is too
sticky, simply add a little flour to it until it becomes firm. If too firm, add a little more
water. The softer the dough is, the fluffier the rolls will be.
5. Continue to knead until the dough is elastic and smooth.
6. Place the ball of dough in an oiled bowl. Cover with a damp tea towel and leave to stand
in a warm place until it has risen to double its original volume.
7. When the mixture has doubled in volume, knock it down and add the seeds if desired.
Then shape it into well rounded balls or rolls. To make shaping easier, keep hands a little
oily.
8. Again cover with a tea towel or cling film and leave to stand in a warm place until
doubled in volume again. The bread will look beautifully ‘puffy’ at this stage.
10. Bake in oven 220ºC for about 20 minutes for rolls or 40 minutes for bread or until well
browned.
11. Check that the bread is cooked by tapping on the bottom. It should sound hollow.
12. Place bread on cooling rack – if left in tin it will sweat. Do not place in sealed container
for storage until completely cooled

Egg Mayonnaise

Ingredients

2 organic eggs
small bunch of chives very finely chopped
1 teaspoonful parsley very finely chopped
2 level tablespoons of aioli or good mayonnaise
freshly ground salt and pepper

Method

1. Boil the eggs for 10 minutes until good and firm and then place in cold water to cool
completely before using.
2. Using a knife on a chopping board, chop the eggs until very fine and then transfer to a bowl.
3. Add the chives, parsley and aioli (I like this as it has a little garlic in it) or mayonnaise and
mix together.
4. If too dry add a little additional aioli or mayonnaise to help bind the mixture together well.
5. Season to taste with salt and pepper.
6. Use as required in egg sandwiches, putting onto buttered bread or rolls.

Tuna Mayonnaise

Ingredients

1 small tin of tuna
small bunch of chives very finely chopped
1 teaspoonful parsley very finely chopped
2 level tablespoons of aioli or good mayonnaise
salt and pepper to taste

Method

1. Put the tinned tuna (with oil or water removed) into a small bowl..
2. Add the chives, parsley and mayonnaise and mix together.
3. If too dry add a little additional aioli or mayonnaise to help bind the mixture together well.
4. Season to taste with salt and pepper.
5. Use as required in tuna mayo sandwich, putting onto buttered bread or rolls.

Humus Salad Sandwich

Ingredients

small tub of humus
1 tomato cut into thin slices
1 small cucumber cut into thin slices
few lettuce leaves

Method

1. Onto the bread place the lettuce leaves, followed by the tomato slices and cucumber slices.
2. Put a large dollop of humus over all of the salad and spread gently with a knife.
3. Put on the second slice of bread or other half of a roll.

Cheese and Tomato Sandwich

Ingredients

1 tomato cut into slices
3 slices of cheese of choice
salt and pepper to taste

Method

1. Put layers of tomato and cheese onto a roll or between to slices of buttered bread.
2. Season to taste with salt and pepper.
