Recipes for National Cooking Programme – Week Eighteen

We’re very excited to launch our National Cooking Programme an ‘oven-ready’ programme of x20 FREE online interactive classes for teenagers wanting to learn to cook. Here is what we’ll be cooking on Wednesday 13 October 2021 at 5.30pm which will be livestreamed on Instagram and YouTube.  Please get prepared with the ingredients and familiarise yourself with the recipe so you can cook along with us.

Shopping list

Firstly, here is a handy shopping list for all of the ingredients required:

400g tin of adzuki or any bean of choice
75g breadcrumbs
1 medium onion
1 large carrot
1 clove of garlic
good handful parsley
rosemary or oregano -fresh or dried
tabasco
vegetable oil
3 large eggs
salt
plain flour
baking powder
85g/3 ozs dark chocolate
85g/3 ozs butter
150g/5.5ozs/¾ cup sugar

 

Bean Burgers

Ingredients

1 400g tin of adzuki or any bean of choice
75g breadcrumbs
1 medium onion finely chopped
¼ cup vegetable oil
1 clove of garlic finely chopped
1 teaspoon finely chopped rosemary or oregano
1 large egg
1 large carrot grated
2 tablespoons finely chopped parsley
dash of tabasco
1 small teaspoon salt
¼ cup vegetable oil for baking burgers

Method

1. Fry the onions in about half of the oil until good and brown.
2. Then add the garlic and fry for about 30 seconds but do not brown or it could become bitter.
3. Drain the bean and smash them roughly with a potato masher. Do not mash too smoothly but leave lumps so that the texture of the burgers is good.
4. Add the fried onion and garlic, herbs, grated carrot, eggs, breadcrumbs, tabasco and salt to the beans. Do NOT overmix or the burgers will become too fine. They need to have some crunch.
5. Make the mix into 70g fritters – flatter rather than higher.
6. Place on greased baking tray and sprinkle the remaining vegetable oil over the burgers as this will help them become good and crisp.
7. Bake in oven 200ºC/390ºF until good golden brown colour.
8. Great on a burger bun with trimmings of lettuce, tomato, pickles, mayo and ketchup.

Chocolate Brownies

Ingredients

85g/3 ozs dark chocolate
70g/2.5ozs/½ cup flour
85g/3 ozs butter
150g/5.5ozs/¾ cup sugar
2 eggs
½ teaspoon baking powder
pinch salt

Method

1. Melt the butter and chocolate together in a saucepan over a very low heat.
2. Meanwhile beat the eggs lightly then add the sugar and beat until blended.
3. Mix the flour, baking powder and salt together.
4. Add the melted butter chocolate mixture slowly to the beaten eggs and sugar beating the
mixture all the time.
5. Then add the dry ingredients to the chocolate mixture and mix quickly and gently until
blended.
6. Pour the mixture into a greased 8″ x 8″ baking dish and bake in oven 350ºF/180º for about 25 minutes.
7. Cut into 9 squares (ie 3 x 3) and eat either warm or cold. The middle must be slightly soft
and gooey. These brownies are absolutely delicious!
