RECIPE: Pomegranate Molasses Dressing
This dressing enhances any vegetables or salads. Simply pour over a small amount. We use it on either boiled or grilled vegetables. You can further enhance them and give them a ‘Middle Eastern’ flavour but sprinkling over za’atar or sumak. A light sprinkling of cumin is a good addition too.
Pomegranate Molasses Dressing
INGREDIENTS
4 tablespoons pomegranate syrup
4 tablespoons water
1 clove crushed garlic
12 tablespoons olive oil
½ teaspoon salt
freshly ground pepper
METHOD
1. In a bottle suitable to mix a salad dressing, mix together the pomegranate syrup and the water.
2. Add the crushed garlic.
3. Add the salt and pepper.
4. Finally add the olive oil and shake the dressing until well amalgamated.
5. Taste for seasoning. You may have to add a little additional syrup, water or oil depending on what taste you wish to achieve.
This dressing has a sweet and sour quality and is delicious on grilled or boiled vegetables.
A particularly delicious salad can be made using 1 packet frozen broad beans boiled and shelled, 1 packet frozen artichoke hearts boiled and thinly sliced and a handful of mint leaves.
Mix and coat the ingredients with the pomegranate dressing and leave it to marinade at room temperature before serving.
