Menu Options

We tailor menus to take into account likes, dislikes, and dietary restrictions. We always include some challenging techniques so that participants leave feeling they have really achieved something as well as having had a wonderful, relaxed and fun experience.

Our emphasis is on delicious, flavoursome food using excellent ingredients. We use only high quality, sustainable, primarily organic ingredients and organic wine is provided with the meal.

 

3 course Italian menu

  • Ricotta and lemon ravioli with a browned mint butter sauce
  • Rhug organic lamb with gremolata, garlic smashed potatoes and roasted Mediterranean vegetables
  • Olive oil and vin santo cake with seasonal fruit and Mascarpone

3 course Middle Eastern menu

  • Mixed mezze with homemade pitta
  • Fillet of lamb/chicken breast/grilled fish chermoula (group to choose one) with herbed couscous
  • Semolina cake with yoghurt and fresh oranges

2 course Italian menu

  • Polpette with a tomato sauce on homemade tagliatelle with salad
  • Panna cotta

2 course Spanish menu

  • Mixed tapas with rustic rolls
  • Flan

Chocolate Workshop (3hr)

  • Arrive at Cookery School to homemade Cookery School brownies and a mug of hot chocolate (the real deal!) or a glass of wine and some savoury nibbles if you’d prefer/ depending on the time of day perhaps
  • Start the class with a chocolate tasting – looking at brands across the board, from high street to fine chocolate. You’ll gain a really good understanding of what makes a good chocolate
  • Demonstration of tempering chocolate
  • Make your own ganache under expert guidance
  • Roll your own truffles (white, milk and dark)
  • Make chocolate discs and fruit and nut rochers with chocolate that has been tempered
  • Take away a box of chocolates made in the session
  • We use beautiful Valrhona, Original Beans and Amadei chocolate

Afternoon Tea (3hr)

  • Arrive to Cookery School to a welcome aperitif of  award-winning Nyetimber English fizz with homemade nibbles
  • Learn to shape finger bread rolls
  • Classic British sandwiches: egg mayonnaise on finger rolls and cucumber sandwiches on homemade white bread
  • Scones with homemade seasonal fruit jam (which we will demonstrate how to make) and clotted cream
  • Savoury cheese and herb scones
  • Devonshire cream cake (the most delicate of sponges filled with whipped cream and topped with an Original Beans chocolate ganache)
  • Traditional lemon curd tartlets (you will learn how to make the lemon curd and the pastry)
  • A range of teas/coffee as well as Nyetimber English sparkling wine will be served with the tea
