3rd June – 12th July 2019, 8.45am – 4.30pm
This very intensive six week professional cooking course provides the fullest possible culinary knowledge that will last a lifetime. Participants leave us with a Level 3 Certificate from OCN London and the confidence to take steps towards a career in food, starting work in a professional kitchen, doing seasons on a yacht or in a ski chalet, catering for dinner parties or simply enhancing their own cooking repertoires.
Who is this course suitable for?
The course is suitable for all ages and abilities, for anyone with an interest in cooking who wants to develop their existing skills and repertoire. The intensive structure will equip pupils with the knowledge, skills and confidence to go into small-scale catering, yacht or chalet cooking or work in professional kitchens.
The course aims
- To make students into competent cooks so that they can undertake cooking for decent sized groups.
- To make students understand the principles behind cooking so that this learning can be extended to other recipes, cuisines and environments.
- To allow students to feel relaxed about producing food that may currently seem overwhelmingly difficult. By the end of six weeks they will be able to approach major cooking tasks with confidence.
- To teach students to plan, budget and think ahead. If they have done this correctly, shopped and have good recipes, the rest will follow.
The class size is limited to 12 participants at our central London Kitchen. As well a having a high teacher to pupil ratio we provide high helper to pupil ratio to allow as much time as possible to be devoted to valuable learning rather than tasks like washing up.
The cost of the professional cooking course is £7,750 which includes the cost of OCN Level 3 certification, WSET (wine) Level 2 qualification, health & safety award, all necessary ingredients and equipment as well as a daily fresh apron. You will need to purchase your own chef’s jacket and trouser but aside from this, there are no hidden extras. This cost is inclusive of VAT.
We are happy to take payment in instalments, with the final payment being made at least four weeks before the start of the course. Depending on your circumstances, you may be eligible to apply for a professional development loan from the government. Find out more here.
The course runs Monday – Friday from 8.45am – 4.30pm for six weeks with extended classes on certain days. At lunch time participants sit down the Cookery School table to taste the food that has been made that day.
Why a cook’s certificate and not a chef’s one?
Cookery School was founded on teaching people how to cook good food with confidence. Many of our recipes were handed down from my mother and grandmother and we want to pass these solid and reliable recipes down through generations to come. We believe that to be a good cook, you need to master the fundamentals of cooking before taking them to the next level and this is what our Cook’s Certificate aims to achieve.
Once an enrolment form has been completed, we suggest that prospective candidates visit the school (our premises are very close to London’s Oxford Circus Tube Station) to learn in greater detail the content of the course. There is time to ask all necessary questions to ensure that those taking the course gain what they are hoping to from it.
