One of our favourite side dishes for this time of year (and everyday)! Our Christmas recipe for roast potatoes is quick, simple and delicious.


Roast Potatoes



Allow 2 good sized potatoes per person
rapeseed oil



1. Peel the potatoes and place in a saucepan.
2. Cover the potatoes with sufficient cold water to just cover them.
3. Place the saucepan on the heat and bring to the boil.
4. Remove from heat immediately and drain the par-boiled potatoes well. Leave them to stand
for a while. The potatoes must be dry before roasting.
5. Pour sufficient rapeseed oil into the pan, ensuring that the potatoes will be covered.
6. Then one by one, using a large spoon, lower the potatoes into the very hot oil.
7. Turn the heat down and allow the potatoes to cook gently in the oil until golden and crisp.
This could take an hour or more. They are very more-ish.
8. Alternatively if far less ‘rich’ potatoes are required, pre boil the potatoes then drain and
place around the turkey about 2 hours before it is to be removed from oven.
