HANDS ON WORKSHOPS
Hands on Sushi -
Kimiko Barber
Wednesday 10 September, 7.00pm to 9.15pm (£75)
Kimiko, award winning author of ‘Sushi Taste and Technique’ will show you a trick or two to make your own
sushi. This class will include a fascinating talk on sushi’s long history and a demonstration of how to
prepare sushi rice, the all important starting point. Best of all is the hands on experience you will gain
in rolling sushi under expert supervision.
Hands on Pasta -
Natascia Phillips
Saturday 13 September, 10.00am to 3.30pm (£175)
Natascia studied pasta making in Italy and will share her secrets at the class. You will
learn to make a range of pasta: fresh trofie with green
beans, baby potatoes and pesto, prawn ravioli, vegetable lasagne, tagliatelle with braised
leeks, and farfalle with sprouting broccoli and chilli. The various pastas will be made from scratch
and will be accompanied by matched organic Italian wines. The day will start with a renowned Cookery School
Italian breakfast and will end with homemade ice cream, coffee and biscotti.
Italian Summer
Wednesday 17 September, 7.00pm to 9.15pm (£75)
This class makes the most of the sun ripened ingredients available in early autumn.
As you arrive, mini pizzette will be served with a welcome drink. You will
then learn to make fresh tomato and basil soup with parmesan and anchovy crostini;
homemade fettucine with prawns; roast herbed lamb; grilled zucchini, caponata and
peperonata; and to end the meal biscotti and a medley of seasonal ice creams.
