Cookery School at Little Portland Street has worked at becoming as sustainable as we possibly can since our inception. Some of the goals that we set for ourselves seemed daunting at first but we found that in reality, it was not tricky at all but just required a certain mind set and practicality in putting new practices in place.
Sustainable Kitchen is an OCN accredited, one unit, one day course that addresses sustainability issues for those associated with kitchens or working with food. It brings to life, in a very realistic and practical way, the issues that need to be addressed so that those who wish to implement their own sustainable practices leave us confident to do so.
Sustainability is not a holier-than-thou mantra but something with which we all want to engage. If you can recall how tricky recycling used to seem to us when it was initially introduced in the UK, it has now become part of what we all do quite naturally. It is exactly the same with buying of fish, chocolate, fruit and veg; use of water, electricity and plastics to name but a few items that we discuss on the course. We aim to have students understand why buying practices, for example, need to be slowly changed to make the planet a safer place now and for the future.
