Cookery School

Classes

These classes teach delicious dishes that can be prepared quickly or in advance to be enjoyed with family and friends. These sessions take place during the day and the evening. Every class ends with everyone sitting down around the Cookery School table to taste the food that has been cooked along with a glass of wine. 

Sourdough Masterclass with Dan lepard

"Dan Lepard is one of the most respected and widely-read bakers in the world, acclaimed for his belief that haste produces the worst bread and for asserting that patience and care are qualities that can be nurtured in the busiest of lives. He writes a weekly column in The Guardian and he has become the alternative baking guru for a generation unconvinced by celebrity chefs."

Friday 10 September 2010 9am - 4pm (£215)
This will be a 'hands-on' Sourdough class, showing you how to create and keep a healthy leaven (or 'starter'), then teaching you expert techniques for mixing, kneading and shaping the dough, through to the finished loaves coming out of the oven. Dan will show you how to achieve the crust and crumb, taste and texture you've aspired to, along with a host of tips & tricks, and then after lunch, a second class on shaping skills, a recap on what's been learned during the day, and a Q&A session. Numbers will be limited to 14 people, to ensure that Dan is able to work with each of you individually. You will leave with your loaves, a pot of leaven and a lot of new skills that you will be able to put into practice at home.

Start with a caramelised onion focaccia and seasonal minestrone, followed by butternut ravioli with sage butter. In this class, you will learn how to make homemade pitta bread, houmous, tzatziki, an aubergine and tomato salad, spanakopita, a lamb tagine and a chicken chermoula, Persian rice and a delicious orange and almond cake and cardamom and rosewater ice cream. Enjoy a day cooking and eating wonderful Spanish food. Lunch is a selection of tapas, including tortilla, patatas bravas, fried padrone peppers, garlic prawns and rustic rolls which will be followed by a chicken and prawn paella and chorizo and butter bean stew. The meal will end with the special torta di Santiago and a Pedro Ximenez sherry and raisin ice cream. Homemade magdalenas will be served with coffee and teas. Spanish wines will accompany the meal. Enjoy a day learning about this popular cuisine. In this class you will learn how to identify and prepare a range of new ingredients. Start with bean salad, green papaya salad, crab and cucumber salad, followed by hot and sour prawn soup, thai fish cakes and vegetarian spring rolls with a dipping sauce. Then enjoy phad thai, green chicken curry, hot and sour grilled fish and jasmine rice. To finish, sticky rice with mango and coconut ice cream. A selection of wines and beers will accompany the meal. Bread Baking

Experience the joy of bread making. Knead, pummel and stretch your way to perfect bread. Learn to make a basic white loaf, a focaccia, granary bread, cinnamon rolls and a traditional Sabbath bread. You will leave the class with a bag of dough to bake at home.

A special knife skills class aimed at using the new Wusthof knife you will receive on the day. By the end of this class, you will have learned your way round chopping, slicing, dicing and filleting. We will teach you all the tricks of the trade so that you can chop your way to a more professional finish. The class includes minestrone with hand chopped pesto, caramelised onion focaccia, grilled catch of the day served with braised fennel, hand chopped Bolognese with hand sliced tagliatelle, and to finish a wonderful apple cake served with caramelised oranges. All this using Cookery School’s carefully sourced, best quality produce. To top off the package, we will also give you a really great knife skills cookery book to take away with you as well.

Christmas All Wrapped Up

Take the panic out of Christmas and have most of your Christmas cooking done well in advance. Spend the day at Cookery School and leave calm, cool and collected with your Christmas goodies in tow. By the end of the day, you will have made your cranberry sauce, your stuffing and bread sauce (which you can freeze at home) your Christmas cake, your Christmas mince for mince pies and have learned how to time your Christmas meal to perfection. We will also show you how to make the best ever organic turkey and gravy. At the end of the day you will sit down and be rewarded for all your efforts with a fabulous Christmas lunch, followed by a very special Christmas ice cream and all accompanied by delicious organic wine.

At Cookery School, we buy well reared meat and use every last scrap. If you are yet to be convinced of the benefits of organic meat, see what you think after our "roast chicken taste test". We will show you how to get four good meals from one chicken, cook some marvellous meals with mince, and enjoy the pleasure of slow cooked old fashioned cuts. And, for those who yearn for the Good Life, there will be a chance to make your very own sausages.

From a large roast chicken, you will make chicken salad; chicken liver pate; a chicken and mushroom pie and a delicious risotto using homemade chicken stock. You will also learn how to make the best ever bolognese, a slow cooked dish of lamb shanks and learn to make your own rare breed pork sausages.

Perfect pulses are not boring! This class is full of exciting things to do with pulses that will really surprise you. You may well become addicted to pulses after this session where we will teach you to make chickpea gnocchi; a fresh borlotti bean stew and a very yummy lentil soup.
