Seafood is the ultimate in luxury eating and a real treat.  In this class we aim to show how easy it is to prepare local – and sustainable – seafood – in a class that is an utter spoil. You will learn how to prepare and cook lobster, crab, razor clams, prawns and scallops.  A major part of cooking is preparation of ingredients so there will be a focus on this part of the process. Be prepared to enjoy a feast accompanied by beautiful French wines that match and enhance this feast of a meal.

You will learn to make:

  • Lightest of seafood vol au vent to enjoy with a glass of chilled organic Champagne
  • Seafood ravioli served in a lobster bisque
  • Steamed razor clams served with homemade rustic rolls
  • Dressed South Coast crab with homemade aioli and a seasonal leaf salad
  • Grilled prawn done in a Portuguese style
  • Scallops grilled and served with sorrel sauce and herbed rice
  • Surprise dessert using summer berries
  • Coffee/teas and homemade truffles
